Rice

Rice – is a great side dish that can work with a multitude of mains. It’s especially great with Asian & Indian inspired dishes. The basic idea of rice is 1 cup of rice to 2 cups of water. Some people like to rinse their rice prior to cooking; I usually do this with basmati rice, but skip this step with regular white rice. Place 2 cups of water in a heavy bottom sauce pan (this will help make sure the rice doesn’t stick or burn at the bottom) with a tight fitting lid! Add 1 tbs of butter and 1 tsp of salt. Bring to a boil and add in 1 cup of rice. Bring back to the boil & immediately lower the heat until the water is at a low simmer. Place the lid on top and cook for approximately 20 minutes. An important step in cooking rice is to make sure to let the rice sit off the heat for about 5 minutes prior to fluffing up and serving. Serves: 1 cup of rice serves 4 Tip: A more elegant way to serve rice is to use a mold and create a shape rather than just spoon it onto the plate. Let me show you! Variations:

  • add in some lemon and/or lime zest & finely chopped scallions
  • cook your rice in chicken broth instead of water to add in some flavor
  • add veggies right into the dish – peas, corn, etc.
