Cooking Basics: Simple Tomato Sauce

Simple Tomato Sauce – always start with olive oil and garlic. Put 3 tbs of olive oil in a heavy bottomed non-reactive sauce pan. Add 1 1/2 tsp. of minced garlic & 1 pureed medium onion (my kids don’t like onion pieces in anything, so in many of my dishes I puree the onion for flavor, but lose the objectionable texture). Cook until soft. Add (2) 141/2 ozs cans of chopped tomatoes, 15 ozs of tomato sauce and 3 tbs of tomato paste. Stir to combine. Add 2 tsp of salt and 2 tsp of Italian Seasoning (which is a great spice blend – basil, coriander, garlic, paprika, oregano, onion, sage, parsley, thyme and black pepper. Variations:

  • Add black olives and tuna
  • Add cooked ground beef and make a bolognaise sauce
  • Add some parmigiano reggiano cheese & ¼ tsp of red pepper flakes to spice it up a little
